I’m always looking for dishes that would do well in my seasoned dutch oven ( see Camp Cooking Equipment You’ll Love). To be a good camping recipe, it also needs to be easy. Often, we don’t start coals until the sun sets and it cools down, which means I’m combining ingredients in the dark. For our past camping trip, I thought I would try to simplify our jambalaya recipe for use in our dutch oven. Please don’t think you need to go camping to use this recipe! I use my dutch oven all of the time in my oven at home and on our fire pit in the backyard.

- 1 lbs. hot link sausage use kielbasa sausage for a milder taste
- 2 chopped onions
- 1 chopped green pepper
- 1 cup chopped fresh parsley
- 4 cloves chopped garlic
- 2 cups water
- 2 cups instant long-grain rice
- 1 15 oz. canned tomatoes
- 1 tsp. thyme
- 1/2 tsp. salt
- 1 lb. frozen peeled shrimp
Ingredients

- Warm dutch oven by placing on 8-10 coals or charcoal briquettes. If cooking on stove, place on low burner.
- Cut sausage into bite-sized pieces.
- Sautee onions and sausage in dutch oven until the onions have just started turning clear. If cooking on stove, turn heat up to medium.
- Add green peppers, garlic, and parsley. Cook until green peppers start to turn soft.
- Add tomatoes, thyme, salt, water, and rice and bring to a boil.
- Put lid on dutch oven and add 8-10 coals (briquettes) on top. Cook for 10 minutes then add shrimp for an additional 5 minutes. If shrimp isn't precooked, cook for 5 minutes, then add shrimp for 10 minutes. If cooking on stove top, lower burner to a simmer before putting the lid on the dutch oven.
